Black Bean Sweet Potato Burgers

These were recently tested in the Dershem kitchen – eaten and enjoyed by one and all. In fact, when I was making them, 2 out of 3 kids commented on how good they smelled and how excited they were to try them. Believe me – that is not a frequent occurrance! You can serve these straight up (they taste great with “veganaise”) or on a bun.

Black Bean Sweet Potato Burgers

2 tbsp. olive oil

2 onions, diced

4 cloves minced garlic

2 carrots, grated finely

2 c. cooked black beans

10 sundried tomatoes, soaked in hot water until softened, chopped

2 baked sweet potatoes, scoop out flesh

2 c. quinoa (cooked)

1 ½ c. bread crumbs

1 t. salt

4 T. mustard

2 T balsamic vinegar

Saute onion and garlic. Cook until lightly browned. Add carrots, beans, tomatoes, sweet potato mush and cook 4-5 minutes. Turn off heat. Mash slightly until beans are ½ crushed. Mix with remaining ingredients. Form 12-15 patties. Cook 4 min. on each side in a skilled or bake 25 min. at 350.
