Vegan Chocolate Mousse – best EVER!!!
2 cups Avocados (about 2)
½ cup maple syrup
2 tbsp. Omega Nutrition Coconut butter (optional – this specific type of coconut butter has no coconut flavor, so is well suited for this recipe – but not necessary at all) In face, I have skipped the coconut butter and it has still been great.
1-2 tsp vanilla extract
1 tsp. good balsamic vinegar
½ tsp soy sauce
1 cup good cocoa powder
In blender or food processor, blend all the ingredients except the cocoa until smooth and creamy. Add the cocoa powder and blend until smooth. You may need to add some of your favorite dairy-free milk if it is too thick to blend, but you do want it nice and thick once blended – so do not add too much at a time.
Keeps in the fridge for up to a week or freeze for up to a month. These make great fudgecicles.
