This can be used as a gluten-free pizza crust, or as a side bread, or really, anything you’d like to use it for.
Socca bread (used for gluten-free, grain – free pizza crust)
½ cup chickpea flour
1/8 tsp. salt
1/8 tsp. pepper
1 tbsp olive oil
Preheat oven to 450. Whisk together the chickpea flour, salt and pepper in a bowl. Slowly whisk in 1 cup lukewarm water, then 1 tbsp. oil. Set aside for 15-20 minutes.
Pour checkpea mixture into loafpan – prepared with olive oil spray. Bake 7 minutes or until socca feels firm and edges appear set.
If using for pizza, you can top it now, then put back into the oven and bake until toppings are warmed and ready to eat.
