Power snacks

When we have these in the house, they are the snack of choice among adults and children. These are great to pack in lunches for snack time.

No Bake Almond Oat Energy Bites (or Granola Balls  as we call them at our house)

Ingredients:

2 ½ cup rolled oats

½ cup almond butter (I use homemade raw almond butter – but you could really use any nut-butter you like)

½ cup raw pumpkin seeds (called pepitas)

½ cup dates

2 tbsp. raw sunflower seeds

1 tsp. cinnamon

¼ c. agave nectar or maple syrup

1 tsp. vanilla

  1. In a food processor, Grind ½ c. oats and ¼ cup pumpkin seeds until powdery. Add dates and process until dates are very small and well dispersed.  Put in bowl.
  2. Combine remaining 2 cups of oats, ¼ cup pumpkin seeds, sunflower seeds and cinnamon in the bowl with the ground oats, pumpkin seeds and dates.
  3. Stir in almond butter, agave nectar and vanilla until a soft dough forms. Add a touch of water if needed.
  4. Moisten hands and roll into 1 inch balls. Place in freezer for 20 minutes to set and then store in the fridge.  For easier preparation, just press into a glass dish and cut into squares. If you are going to do this, you may want to double the recipe and then it will be large enough to fit into a 8×8 square pan.

    These are awesome! I just finished up the batch we made after my visit and they were perfect snacks…I did at a little flax seed (but I pretty much put that in everything)
