Brownie Bites

These are fast becoming a favorite dessert among us all… especially Christian, my dark chocolate lover. These have a very dark chocolate flavor… so if you’re like me, you’ll love them.

1 1/2 cups almonds

3/4 cup old fashioned oats

7 lg. medjool dates (Costco and Meijer sells them – but I think Costco’s are fresher)

3/4 cup cocoa powder (or cocao powder – the raw form of cocoa powder – found at Harvest Health or another health food store)

1/3 cup cocao nibs (chopped cocao beans – which are the beans that chocolate are made from – also found at Harvest Health or your local health food store)

1/3 cup water

1 tbsp. vanilla

Throw the almonds in the food processor and process until well chopped. Add the oats and process a bit more. Add the dates and process until they are only very small bits. Add the vanilla, cocoa powder and nibs. Process yet again to incorporate these ingredients. Finally, while processor is running, pour in the water. This should bind the ingredients. When the water is well incorporated, press into a glass dish (mine is about 8×4 inches or roll into 1 inch balls. Store in the fridge and enjoy as often as you like.

If you’d like it a bit sweeter, decrease the cocoa to 1/2 cup and add a few more dates. You will need a bit less water if you do this. You can also make this using pecans – which is delightful – or 1/2 pecans (3/4 cup), 1/2 almonds (3/4 cup)

    yum…yum…yum…
    Didn’t have the cocoa nibs so I threw in some chocolate chips. Might be a little less healthy, but still worked and they are really good.
